Since Brian Niccol came over as CEO, Chipotle has become more imaginative. But it still operates in a fairly methodical manner. It has a two-tiered testing approach, in which new things are tested in a few stores before being rolled out to the rest of the company.

As a result, it experimented with plant-based chorizo and added chorizo and brisket to its menu for a limited time. It’s not a flawless approach, since the company continues to battle with the queso show. It’s been well-received and has helped to diversify the menu.

The company has now gone beyond simply bringing on a fresh limited-time deal by putting its testing methodology to work. Chipotle has made the decision to modify their chicken. That may sound terrifying, but it’s important to remember that the company’s signature chicken will remain. Along with its traditional chicken, it will provide a unique twist on poultry. Pollo asado’s heightened taste profile offers a new spin on your go-to order, according to a news release from Chipotle.

“Responsibly raised chicken is tossed in a spice blend before being seared on the plancha, and it’s grilled fresh and prepared in small batches every day.” The pollo asado is then hand-chopped into soft, juicy bits and served with a bright marinade, fresh lime, and cilantro,” says the chef.

Why is there a new Chipotle Chicken on the market?

“We’re ecstatic to present fans to a new chicken taste that will add a whole new dimension to any Chipotle order and will undoubtedly be a crowd-pleaser,” says the company. This is a risky move. However, the company’s testing process makes success far more likely.

According to Chipotle, “from November 2021 to November 2022, Chipotle tried pollo asado in select restaurants in Sacramento and Cincinnati for a brief time.”

“Before settling on a national launch approach for new menu innovations, Chipotle uses its stage-gate method to test, listen, learn, and iterate on guest feedback.

“The pollo asado test’s customer reaction and sales were comparable to the results of Chipotle’s bestselling menu innovation in recent history, Smoked Brisket.”

That indicates the new chicken should be well-received, but stage-gate testing can’t tell Chipotle if customers would welcome change. Better does not always triumph over familiar, and the corporation has chosen to take that risk here.

While the new chicken may not be popular, the old version will remain on the menu. That means that instead of a potential New Coke experience, Chipotle customers may have one less-than-ideal encounter.

Chipotle is offering free delivery on all pollo asado orders placed through the Chipotle app and Chipotle.com from March 14 to March 20 in the United States to encourage customers to try the new chicken.
